Ingredients
1 cup diced onion
2 cloves garlic, minced
8 oz. turkey breast meat (skinless),
cut into very small pieces or ground
6 oz. canned red kidney beans, drained
1 package taco seasoning mix
1/2 cup water or chicken broth
2 Kaiser rolls or whole-wheat buns, or 1 1/2 cups cooked rice
Nonstick cooking spray
Directions
Thoroughly coat a nonstick skillet with cooking spray. Gently pan-fry onion and garlic for 2-3 minutes over low heat. Add turkey and cook an additional three minutes. Increase heat to medium and cook until meat is browned, stirring frequently. Add beans, seasoning mix and water or broth. Simmer five minutes until turkey is cooked, flavors are blended and mixture is heated through. Serve on whole-wheat buns or Kaiser rolls, or spread on top of rice. Makes two servings.
