Oatmeal Brunch Casserole
Makes 4 servings
Prep: 15 minutes
Bake: 20 minutes
Ingredients
· Nonstick cooking spray
· 1-3/4 cups soy milk
· 1 tablespoon margarine or butter
· 1 cup regular rolled oats (not quick-cooking)
· 1 apple or pear, chopped
· 1/3 cup dried tart cherries or golden raisins
· 1/4 cup coarsely chopped walnuts, toasted
· 3 tablespoons brown sugar
· 1/2 teaspoon vanilla
· 1/4 teaspoon salt
Directions
1. Lightly coat a 1-1/2-quart casserole dish with cooking spray; set aside. In a medium saucepan bring the soy milk and margarine to boiling. Slowly stir in oats. Stir in apple, cherries, walnuts, 2 tablespoons of the brown sugar, the vanilla, and salt. Cook and stir for 1 minute. Pour into the prepared casserole dish.
2. Bake, uncovered, in a 350 degree F oven for 15 minutes. Sprinkle with the remaining 1 tablespoon brown sugar. Bake for 5 minutes more or until bubbly. Cool slightly. If desired, serve the warm oatmeal with additional soy milk. Makes 4 servings.
